Menu Plan Monday

Anyone else struggle to cook when there’s just a few of you? Hubby was out of town last week and Princess wasn’t home every night for supper so I often had a ice cream sandwich or something else real healthy like that for supper. But praise the Lord, Hubby is home now so I can start cooking again! :-) Check out more great menu plans at Organized Junkie!

Monday lunch: BLT’s

Monday supper: Spaghetti

Tuesday lunch: Leftovers

Tuesday supper: Pork Chops and Chinese Noodle Salad (below)

1 lg Napa cabbage, sliced thin; 5 green onions, diced; 3 pkgs Ramen noodles (do not use flavor pkgs); 1/2 stick butter

Break noodles in small pieces and saute in butter. Let cool.

Mix and chill these 4 ingredients:

1/4 c cider vinegar; 2 tbls soy sauce; 1 cup salad oil; 2/3 cup sugar

Toast on cookie sheet at 350 degrees for 5-10 minutes and set aside:

1/4 cup sesame seeds; 1 pkg silvered almonds

Keep cabbage, noodles, seeds/almonds and dressing all separate until ready to eat. Toss all together just before serving.

Wednesday lunch: Leftovers

Wednesday supper: Family night meal at church

Thursday lunch: Grilled cheese

Thursday supper: Hubby is making supper. Something with fish.

Friday lunch: Leftovers

Friday supper: Ham and Cheese Pockets

Saturday brunch: Stuffed French Toast

1 loaf French bread (with soft crust is best); 2 cups crushed corn flake type cereal; canola oil

Filling: 4 oz cream cheese; 1 tbls sugar; 1/2 tsp vanilla

Egg mixture: 3 eggs; 1 tsp sugar; 1/2 cup milk; 1 tsp vanilla

Put cereal in plastic bag and crush and then put on place. Slice French bread on a sharp diagonal so you get pieces about 5″ long and 1″ wide. Then cut each piece again, parallel to where you cut before, almost cutting it in half, but not quite, creating a pocket.

Stir the cream cheese, 1 tbls sugar, 1/2 tsp vanilla. Stuff each piece of french bread with a couple teaspoons of the mixture. Mix eggs, 1 tsp sugar, milk and 1 tsp vanilla in bowl. Dip stuffed bread slices in the egg mix, then in cereal, and fry in a frying pan on medium heat in about 1/4″ of hot oil, until golden and crispy. Drain on paper towels for a second, and serve with jam, fruit and/or syrup.

The cost of freedom

Hubby has been on a business trip the last week so Angel and I meet him at the airport today to welcome him home. It’s so good to have him home. But that’s a whole nother post. We got there a little early because I wasn’t sure what time his flight got in. As Angel and I sat there playing I noticed two families across the sitting area who were saying goodbye. I could tell by the carry on bags that it was the men that were leaving their families and that these men were in the military.

The first couple was pretty young, probably early twenties. They wore rings, so probably hadn’t been married too long either. They hugged and kissed for quite some time as tears ran down the woman’s face. I couldn’t hear what he was saying to her but it seemed like he was doing his best to reassure her as he held back his own tears.

The other couple was probably in their mid-thirties. They had two little ones playing around their feet. The woman wept as her husband held her and I could tell that he was crying too. He hugged his babies and then kept hugging and kissing his wife, he too reassuring her.

I sat across the room, holding Angel, with tears running down my own face. I wanted to run over to each of them and thank them and pray for them. My heart ached for these families. Not only because I had just finished a very lonely and exhausting week without my hubby but also because I was so proud of the sacrifice they were making. They were leaving their wives, babies and everything that was comfortable. I couldn’t help be reminded that they were doing that for me. For our country. For a freedom that I often take for granted.

I often get very angry at our country. It grieves me to see how far we have fallen from the the country we used to be. From the values and morals and faith that used to be the foundation of our country. But today I was proud. And humbled. And inspired. And thankful for the great sacrifice these two men and so many others are making. And reminded that as much as I need to stand for the Truth of God’s Word and fight for the cause of morality in our nation, I also need to pray for those that are giving all they have. And I hope that the tear stained faces of the men I saw today remain in my memory for a very long time.
